First, hand-harvesting our Chardonnay in the early morning hours keeps the fruit cool. Then de-stemming the grapes into small open top fermentors. Finally, allowing the fermentors after a 5-day cold soak to warm up with indigenous yeasts starting to ferment. And creating the final blend in the spring. In addition, the wine rests for a total of 16 months in 40% new French oak. Plus bottled unfiltered and un-fined. While the natural acidity of the fruit sending lively dark fruit and cola flavors to a lingering finish.
Winemaker Jérôme Chéry | Less is More
Jérôme believes memorable wines are made on a small scale with the highest quality grapes. As a result, taking the opportunity becoming winemaker at Fog Crest Vineyard in January 2014. So, I really wanted to relocate to western Sonoma County; the quality of the fruit here is wonderful.
First, in 1997 Jérôme moved to California to be Assistant Winemaker at Napa Valley’s Newton Winery. That coming after winery stints in Provence, Loire Valley, Australia’s Swan Valley, and the Languedoc region. Joining Littoral in 2000 under Ted Lemon to focus on Chardonnay & Pinot Noir, Jérôme developed his vision of “Less is More” making terroir-driven limited production wines.
